

Roll up, roll up for another baking post! I know I said I'd have one for you every Wednesday, and the more eagle eyed of the lot of you may have noticed that a) there wasn't one last week and b) it is in fact a Sunday, but life got in the way a bit recently and I've been a little shit - shall we say - so I do apologise for its lateness. I've got a corker to make up for it though; I ruddy love a good banana bread, and what we have here is just that. A healthy, gluten free one, more to the point. Howdya like them apples (...bananas)?
Makes about 15 mini slices
2 Ripe Bananas (mashed)
2 Large Eggs
2 cups Ground Almond
1/2 cup coconut oil
1/4 cup chopped walnuts
2tsp Baking Powder
1 tsp Cinnamon
1/2 tsp Vanilla Essence
1/2 tsp Vanilla Essence
Pinch of Salt
Handful of Banana Chips
Handful of Banana Chips
Maple Syrup to drizzle
1) Grease a baking tray and set the over to 180 degrees (fan oven).
2) Pop your dry ingredients - ground almonds, baking powder, walnuts, salt and cinnamon - together in a bowl and mix until combined.
3) In a separate bowl, mix your bananas, eggs, vanilla essence and coconut oil until combined in a thick custard-like paste. Slowly add in the dry ingredients, stirring slowly and evenly.
4) Once combined, pop your mix in the baking tray, smooth over with the back of a spoon and place some banana chips on top before baking for 25 minutes. At the 25 minute mark, remove from the oven and drizzle with maple syrup before baking for a further 5-8 minutes until golden brown

And there we have it! Slice as you like; I normally choose to go for 15 mini slices because it feels like you have more (Bruce Bogtrotter reporting for duty). For being so healthy, they truly are delicious...
